Diagnosing a tearing wrapper
Tearing during rolling is more often about pressure and evenness than about the water content. This is functionally the same diagnosis as cracking, just showing up as a ragged split instead of a clean crack, and the same fix applies: check the actual hydration against a standard 45-55% target rather than assuming the fold technique is at fault.
Flour type shifts where the cracking threshold sits
The 45-55% "standard" range assumes a fairly ordinary all-purpose wheat flour. A higher-protein bread flour absorbs and holds more water for the same weight, which means a dough at the same stated hydration percentage can actually behave stiffer and more crack-prone with bread flour than with all-purpose, simply because more of that water is bound up tightly in gluten rather than left free to keep the dough supple.
